This Asian Salad with Thai Lime & Chili Cashews calls for a little spice! I love salads but once in a while I want something that gives my taste buds a shock something different. This recipe will do just that. Living in New Mexico I eat a lot of spicy food but this recipe is a bit different and has a perfect bite of a different kind of spice! In my Cookbook they are some great Asian Salad Recipes and this is a twist off one of the Asian Salad recipes in the Cookbook. I added some chili lime Thai cashews I bought from Trader Joes. The nuts by themselves are a great spicy snack but on a salad they are simply perfect. Enjoy!
Asian Salad with Thai Lime & Chili Cashews
Seasame Asian Dressing:
¼ cup olive oil
½ rice vinegar
¼ canola oil
1 teaspoon soy sauce
½ garlic powder
2 tablespoons dark sesame seed oil
1 tablespoon Dijon mustard
Dressing: In food processor add all ingredients and pulse until all ingredients are incorporated.
Salad: In large flat bowl layer your ingredients: lettuce, cabbage, onion, cucumber, peas, tomatoes carrots, red pepper, and chili lime cashews. Drizzle salad with dressing, toss and serve immediately. The Thai chili lime cashews offer a spicy bite to this salad. If you don’t have access to them you can use regular roasted cashews and add a ½ teaspoon of Shiracha hot sauce to the dressing if you like it spicy! I LOVE SPICY FOOD – but I know not everyone does.
