Spicy Chorizo Breakfast Burrito

Spicy Chorizo Breakfast Burrito you are going to love this one! Believe it or not I did not grow up eating chorizo. For those of you not familiar with Mexican Chorizo, more common to the state of New Mexico, it is a type of sausage, pork or beef or a blend of both mixed with red chile peppers. It is usually fairly spicy and can sometimes be quite hot. It is great to mix in breakfast burritos. This chorizo is made from pork and beef, I bought it at our local Mexican Grocery store. For authentic Mexican chorizo visit your local Mexican market and check with the local butcher, sometimes you can get it fresh and ready to use. (You won’t have to remove the casing, one less step.) This recipe takes a little effort and some extra time, so I usually make them on a weekend when I am not rushed and running off to a basketball game or some other kid function. My family loves a great breakfast burritos, and I like to change up the recipe so my kids don’t get bored. I like to rotate using sausage, bacon and chorizo. The rest of the ingredients don’t change too much, sometimes I use fried potatoes instead of hash browns. And to keep it slightly healthier (I find it hard to call a breakfast burrito healthy, with all the cheese, etc. but, a couple times a month it is a special treat!) I used a non-stick frying pan, I recommend investing in a high quality frying pan. It is worth the calories you save on using extra oil when frying. The eggs, cheddar cheese and a flour tortilla are the rest of the ingredients that go into a breakfast burrito. Another little tip: when purchasing tortillas look for nice burrito tortilla, they are usually slightly larger and thinner, making it easy to form the final burrito. Ingredients
- 8 ounces Chorizo (Good Quality Chorizo can be found at most grocery stores)
- 8 ounce Fried Hash Browns
- 1 tablespoon cooking oil
- 1 1/2 cups Sharp Cheddar Cheese + more for garnish
- 2 cups Red Chile Sauce (See previous posts)
- 4 large flour tortillas
- Salt to taste
Instructions
- Prepare red chile sauce and set aside, (keep warm) see my previous post for red chile sauce. (You can use prepared red chile sauce, if you prefer.) Fry hash browns to your liking, I like mine with a nice crispy texture.) In a medium frying pan, cook chorizo until cooked thoroughly about 10 minutes, drain excess fat. Add 6 eggs and cover with cheese. Warm tortillas over open flame or a grill. Assemble burritos: lay tortilla flat, add, chorizo, egg and cheese mixture, fold bottom first and then roll. Plate burritos and cover with red chile sauce and garnish with cheddar cheese. Serve immediately.
- Variations: This recipe can be made with sausage or ground beef instead of chorizo. You can aslo use Mexican white cheese or pepper jack cheese.
Notes
- TIP: I have thing about using black pepper with red chile or even green chile for that matter, I do NOT combine them with traditional southwester cuisine. I don't think it is a good combination and the black pepper can overtake the subtle flavors of red and green chile. I'm just saying . . . but, if you wonder why I skipped the pepper on the eggs and potatoes that is the reason!

1 cup red chile powder (This is ground red chile)
1 teaspoon sea salt
4 cup water
½ teaspoon garlic powder
2 tablespoons butter (or lard)
1 1/2 tablespoons flour
Mexican cheese (a great substitute is white cheddar cheese)
Instructions
Over medium heat melt butter and add flour. Allow the flour to bubble and slightly brown about 1 – 2 minutes. Add the red chile powder, mix continuously until the red chile has all warmed and toasted slightly about 1 minute, then gradually pour in water while continuing to mix. Continue to mix until sauce is smooth and no lumps are seen. Reduce heat to simmer and allow to cook over medium for 20 – 30 minutes until red chile sauce has cooked and slightly thickened. Sprinkle cheese on top of burrito. Enjoy!
