I just love spicy food! This creation of Spicy Chicken and Pasta hit the spot today. Pasta is my all time favorite food to eat plus my kids and husband love it too! I have made pasta hundreds of ways over the years and today was not an exception. I was craving pasta and my husband likes protein so I added some left over grilled chicken to the dish and it was perfect – he gets his protein and the kids and I get our pasta. Everyone is happy at Casa Linda today, ahhhh . . . Mommy loves it when everyone is happy. Life is good!
In deep pot sauté olive oil and chopped onion for about 3 minutes then add the chopped garlic allow to cook about 2 more minutes on medium heat, then add one cup red wine (this will deglaze the pan and add depth of flavor) let most of the wine evaporate about 2 minutes, then add in petite diced tomatoes, chicken grilled chicken and the diced sun dried tomatoes. Season with salt, pepper and spices. Let simmer about 25 – 30 minutes. Meantime cook pasta according to package instructions – minus one minute for aldente. Serve pasta in large serving dish and cover with sauce and chicken. Add parmesan cheese and serve. Bon Appetite!
