Spaghetti is one of my families favorite meals. If it were up to my children we would eat Spaghetti every other night. I can’t really blame them – I LOVE SPAGHETTI TOO! Over the years I have played around with new ways to make it better, easier, faster and delicious. Here is my take on my favorite food. I was inspired by my Mother-in-law to add green olive to this dish it reminded me of a lasagna dish she use to make for me.
Spaghetti with Italian Sausage and Green Olives
In deep pot on medium heat sauté two tablespoons olive oil, onion, sausage and garlic. Cook about 10 minutes until the sausage is cooked through. Then add the red wine to deglaze the pan and add a depth of flavor. Continue cooking to allow most of the wine to evaporate about 3 – 5 minutes, add in diced tomatoes, tomato puree, and all spices. Let simmer about 20-30 minutes. Add in green olives and turn off heat. Meantime cook pasta according to package – minus one minute for aldente. Always test your pasta to make sure it is cooked. Drain pasta put into your serving dish, ladle sauce over pasta and add Parmesan cheese.
TIP: If you like your pasta aldente look for the center to be slightly darker, take a bite you want it cooked but not too hard.
