Okay, yes I love to eat. It is no secret. I also love working with fresh vegetables to create healthy snacks for my family. The kids come home from school asking for something to eat. And let’s face it, if there is not something easy and healthy at hand they go for chips or processed food. I try like every Mother to make sure they are eating healthy foods. This is a very healthy snack everyone will love.
Avocado Pico De Gallo
Directions: In mixing bowl add all chopped ingredients. Add fresh lime juice and salt. Serve immediately. Enjoy with tortilla chips, over burgers, tacos, or as a side salad.
TIP: make sure your tomato and avocado are ripe but firm. Over ripe tomatoes or avocados will make this dish mushy! Enjoy
