New Mexico is the best place to be in the fall. The air spells so good with chili roasting at all the local markets, the coolness in the air and the sun shinning in the blue sky above makes you feel good all over. This New Mexican favorite “Posole With Red Chili and Pork” just makes a super lunch or dinner for the entire family. It is a hearty filling stew that is so easy to make in your slow cooker. I guarantee you your family will be begging for more.
Directions: In large skillet sauté onion and pork. Set aside. In large crock pot add liquid, posole, chili and spices. Add the onion and pork. Let cook on high for 2 – 4 hours or on low for 6 – 8 eight hours. Some crock pots vary so check posole once they start splitting or pop they are cooked. Taste and check for tender corns. Discard bay leaves. Garnish with a fresh slice of jalepeno and fresh cilantro.

I buy the frozen bags and it is usually about 16 ounces. That will fill a crockpot! Great for leftovers. I love posole!
