This is not your typical Spaghetti Carbonara. I like my carbonara spicy and with some nice colorful vegetables. This is my take on a traditional Italian dish that will make you want this again and again. If your Italian – I apologize I know how you are about some of your traditional dishes. All my best . . . .
Directions: In large skillet add olive oil, Italian sausage, red onion and red pepper and garlic. When the vegetables and sausage are nearly cooked add the red pepper flakes, salt, pepper and Italian Seasonings. Mix well and add the heavy cream – once it starts to bubble turn down heat to low and add frozen peas and parmesan cheese. Mix well and turn heat off. Cook Spaghetti now. In a small mixing bowl beat two eggs and gradually add into the sauce mixture. Drain pasta and put into large serving dish, pour sauce over and mix. Garnish with parsley and parmesan cheese. Serve immediately.
