Nest of Corn Beef Hash

Simple meals are the best, there is no doubt about it. My family loves, loves corn beef hash. This is my healthy take on a meal that is not always low fat. That does seem to be a theme this week. I am trying to eat healthier and eat more vegetables and fruits and lean proteins. Corn beef hash is one of my favorite go to meals on the weekend. For starters I purchased some natural hash browns, not preservatives, etc. and I bought some corn beef from the deli. I had the butcher trim the extra fat off so it was mostly lean corn beef. I chopped it finely and cooked it along with the hash browns. To finish the hash, I put each serving in a ramekin and added the egg on top, I finished them in the oven for about 10 minutes and they were perfect. The hash browns were nice a crispy and the egg was perfect (I like me yolk runny.) I served it with some sourdough toast and fresh squeezed juice. It was fabulous. This would be a great breakfast for dinner idea. I think I will try that in the very near future. It was a healthier option than the can corn beef loaded with fat, and I think it was even more delicious. I love hearing from you, please let me know what you think of this recipe. Ingredients
- 2 cups hash browns
- 1 tablespoon vegetable oil
- 1 1/2 cups corn beef, chopped
- 4 eggs
Instructions
- In large non-stick frying pan add the oil, corn beef, and hash browns.
- Season light with salt and pepper.
- Cook until potatoes are tender about 15-20 minutes, mixing often.
- Transfer to 4 individual ramekins and put one egg on top.
- Finish in the oven at 375 degrees for about 10 minutes or until the eggs are cooked.
- I like my yolk runny.
- If you like yours firm add 2-3 minutes to the cooking time.
- Remove from oven and serve immediately.
- Enjoy!
