Slowcooker Beef Stew

Amazing soups and stews are easy to make. Using a slow cooker is the way to go when making beef stew. Allowing the beef to absorb the flavor of the herbs spice and vegetable is what makes this recipe outstanding. I love allowing the beef to cook even longer if possible, but I don’t like mushy vegetables. I like them to still hold their shape and taste. You can make this recipe allowing the beef to cook four hours and then adding the vegetable for another four hour if you can and have the time. If not the four hours for both works just fine. With the snowy weather we are having I am making lots of delicious soups and stew in my crock pot. (More recipe to come shortly.) My favorite part of making things in the slow cooker that is that I have leftovers for the next day.
Serve this stew with a nice side salad and you are good to go.

Ingredients
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon Salt
- 1 teaspoon black Pepper
- 1 teaspoon parsley
- 1 teaspoon thyme
- 2 bay leaves
- 1 packet Lipton onion soup mix
- 1 can cream of mushroom soup
- 2 cups chopped carrots
- 1 cup frozen sweet peas
- 1 cup chopped onion
- 2 cups chopped potatoes, with skin
- 2 tablespoons Worcestershire
- 2 cups cubed beef stew meat
- 32 ounce beef broth
Instructions
- Directions: In large stock pot sauté oil, garlic, onion and cubed beef, season with salt and pepper. Cook over medium heat until browned about 5 minutes. Transfer to crock pot and set on low for 4 hours. Add beef stock, onion soup, mushroom soup, season with Worcestershire sauce, parsley, thyme, and bay leaves. Add carrots, potatoes and one cup of water if need to cover all ingredients. Add 1 cup of sweet peas at the end of the cooking time. They only need a few minutes to warm in the cooked stew. Garnish with fresh parsley and serve with a crusty banquette and a side salad and you will have the perfect meal!
Notes
- TIP: Peas don't need much cooking. To preserve their color and flavor throw them in at the end of cooking. They only new a few minutes to warm.
