Salmon and Rice Cake - A Gluten Free Recipe

Summer time brings all sorts of fun. With all the summer fun comes friends and family getting together. We had some friends over for swimming and dinner a few nights ago. One of our dear friends has a gluten allergy and a severe one at that. I was trying to think up a gluten free dinner recipe. I had some leftover salmon and some rice. I was inspired to make salmon cakes over a nice salad. It was the perfect combination. Light and healthy and for a dear guest it was gluten free. Ingredients
- 2 cups cooked salmon, broken into small pieces
- 1 cup cooked rice
- 1 egg, beaten
- 2 tablespoons mayonnaise
- 1/2 teaspoon old bay seasoning
- 1/2 teaspoon lemon pepper
- 1 tablespoon fresh parsley
- 1 tablespoon fresh dill
Instructions
- In a medium mixing bowl add the salmon, rice, egg, mayonnaise,old bay seasoning, lemon pepper, parsley, and dill.
- Mix well.
- Form into small 3 inch patties.
- In a large skillet over medium high heat add 2 tablespoons butter.
- Once the butter is melted add in the salmon patties.
- Cook on each side 2 - 3 minutes or until golden brown.
- Serve over salad.
