Rocky Road Bark
This easy recipe is sure to be a crowd pleaser. I make this recipe for all my holiday parties. Who can pass up dark chocolate, roasted nuts and soft marshmallows. This is a great way to spread holiday cheer. It is also an affordable gift you can make for friends, family or for yourself!
Melt in 45 second increments until chocolate is melted, 2 – 3 times depending on the strength of your microwave. Lightly oil your cookie sheet and then wipe with a paper towel until only a small film of oil remains. Pour melted chocolate pan and spread evenly with a spatula.
Add nuts* and marshmallows immediately. Press marshmallows down to sink into chocolate. I use a flat spatula to help with this. Allow to cool until it is set firmly, 15 – 30 minutes. When set, turn cookie sheet over; the entire bark should easily release. Break into bite size pieces.
Suggestion: use a good quality chocolate for best results. Your local cake shop should sell them in bulk.
*I use roasted almonds, but you can substitute walnuts, peanuts, pecans, cashews, etc.
