Roasted Beet Salad with Fresh Goat Cheese

Kale is a delicious and healthy option for a green salad. Kale is one of the highest sources of protein in the plant world. It is also loaded with lots of antioxidants, including vitamins A, C, K, Calcium and is a great source of iron. Kale also helps lower cholesterol levels and helps to detoxify the liver. Because it is high in fiber it doesn’t get soggy quickly like other dark salad greens. And lastly it tastes delicious especially with the roasted beets and goat cheese. The Fig dressing is one of my absolute favorites and pairs nicely with the kale, goat cheese and beets. This version of kale salad is an absolute must try recipe. Ingredients
- 4 cups Kale chopped
- 3 medium roasted orange beets
- ¼ cup crumbled goat cheese
- 1/4 cup whole pecans
- 2 tablespoon sweet onion
- Fig Dressing
- 1/3 cup White Balsamic Vinegar
- 1/3 cup Olive Oil
- 1 tablespoon whole grain Dijon mustard
- 1/4 cup Fig Preserves
Instructions
- Directions for Fig Dressing: In food processor add balsamic vinegar, olive oil, mustard and fig preserves. Pulse until all ingredients are incorporated.
- Directions for Salad: Roast beets wrapped in foil for 1.5 hours on 375 degrees. Allow to cool before peeling and slicing. In large salad platter layer your kale, onions, beets, pecans and drizzle fig dressing then garnish with goat cheese and serve.
