Red Chile Huevos Rancheros

Here in the heart of the southwest red chile is something that is easy to find at our local grocery store. We have it in jars, powdered form or pureed and frozen in the frozen section at the corner store and in a dry form known as a red chile ristra at every farm stand. It is a stable for us native New Mexicans. If you are not as lucky, please check your local Mexican grocery store. They always have a great supply and variety to choose from. I do sell the dry form and it is great and just as tasty. Preparing red chili from powder is very simple and takes only 20 minutes or so. The technique I use is an easy one creating a roux and adding in the red chile to slightly toast it. This is done quickly because red chile can burn easily. After toasting the chile I add the water and boil for only 20 – 30 minutes. It is that easy to prepare and most importantly it is very tasty!
Red chile sauce can be added it to a number of foods including corn tortillas and eggs also known as a traditional dish in New Mexico, Huevos Rancheros.

Ingredients
- 4 – 8 corn tortillas
- 1 cup red chile powder
- 1 teaspoon sea salt
- 4 cup water
- ½ teaspoon garlic powder
- 2 tablespoons butter (or lard)
- 1 1/2 tablespoons flour
- Mexican cheese (a great substitute is white cheddar cheese)
Instructions
- Over medium heat melt butter and add flour. Allow the flour to bubble and slightly brown about 1 – 2 minutes. Add the red chile powder, mix continuously until the red chile has all warmed and toasted slightly about 1 minute, then gradually pour in water while continuing to mix. Continue to mix until sauce is smooth and no lumps are seen. Reduce heat to simmer and allow to cook over medium for 20 – 30 minutes until red chile sauce has cooked and slightly thickened.
- Warm corn tortillas on both sides. Plate with red chile and garnish with cheese and second layer of tortilla chile and cheese. Top with a fried egg. And serve immediately.

All the top googled recipes tell you it has salsa on top. It doesn’t. It’s just a corn or flour tortilla with a couple eggs and red/green chili OVER the eggs, not under. I like to have it with green chili on one side, and red chili on the other. SO Buenos! Re fried beans are usually served with it and Pilaf rice. This is the traditional Huevos Rancheros.
