Kale Strawberry Salad

I was inspired by some beautiful strawberries this week to create a wonderful Kale Strawberry Salad with yogurt Poppy Seed Dressing. What is there not to love about this healthy salad? Kale offers so many health benefits, one which I love is that it is a good plant base protein. If you are a vegetarian looking for added protein, kale should be included in your diet on a regular basis. To make it even more nutritious the added pumpkin nuts add a days’ worth of magnesium, zinc and healthy omega 3 fats. These all help prevent diabetes, heart disease and help to lower cholesterol. So hale the kale! It is great stuff.

Ingredients
- 6 ounce Kale, chopped (about 4 cups)
- 1 pint of Strawberries, sliced
- 1/4 cup Roasted Pumpkin Seeds
Poppy Seed Dressing
- 2 tablespoons Yogurt
- 1 tablespoon Honey
- 2 tablespoon white balsamic vinegar
- 1/2 teaspoon Poppy Seeds
- Sea Salt to taste
Instructions
- In a small mixing bowl mix yogurt, honey, vinegar, poppy seeds and salt until well blended. In a serving dish layer kale, strawberries and pumpkin nuts. Drizzle with Poppy Dressing and serve.
Notes
- TIP: To help tenderize the kale you can toss kale with dressing and allow to rest for 20 - 30 minutes before serving. Before serving garnish with strawberries and nuts.
