French Toast Casserole

Well I must confess, I made this by guessing on the ingredients. Actually, I did a good job, yah for me! Katherine had her book club over for a sleepover last weekend and I wanted something delicious, but easy to make for 10 people. I didn't feel like making that many waffles or pancakes, it would take way too much time and effort. So I thought about a recipe my friend makes for brunch and thought I would give it a try. I created a base similar to French toast and had Katherine do all the work! Gotta love that! After all it was for her friends. She cubed the bread, filled the casserole dish, beat the eggs, poured over the egg mixture and covered it until the next morning. I pulled it out an hour before baking, because I always worry about Pyrex breaking going from very cold to a very hot oven. Any way it was fabulous! To make it easy I melted the butter and mixed it with Maple Syrup and poured it over the casserole, to prevent a sticky mess. I love to use real maple syrup, because you don't get all the bad stuff like high fructose corn syrup and you only need a little. A little bit goes a long way when using good quality maple syrup. I garnished it with fresh strawberries and topped it with powdered sugar. It was a huge hit! The kids were saying it was the best French toast they ever had! WOW, I was delighted. . . . so here is the recipe. Let me know what your think.

Ingredients
- Loaf of Sourdough Bread, cut into cubes
- 10 eggs, beaten well
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1 pint strawberries, sliced
- 2 tablespoons brown sugar
- 2 cups whole milk
- ¼ cup dark brown sugar
- ½ cup Maple Syrup
- 3 tablespoons butter
- ¼ cup powdered sugar for garnish
Instructions
- Cut bread into bite size pieces. Place into a 9 x 13 casserole pan. Beat eggs well, then add milk, vanilla, brown sugar and cinnamon. Mix until well blended. Pour over bread and press bread down so it all can absorb the egg mixture. Cover casserole pan with plastic wrap and store overnight in refrigerator. Take out one hour before ready to bake. Bake in 375 degree oven for approximately 45 minutes. Mean time slice fresh strawberries and set aside. In a small bowl melt the butter in the microwave for 10 – 15 seconds and add in the maple syrup. Before serving microwave the syrup and butter mixture and drizzle over the casserole. Cut casserole into 12 serving pieces, drizzle with syrup and top with strawberries and powdered sugar.
Notes
- TIP: All but about 4 – 6 slices, depends on the depth of your casserole dish) Also, if it starts to brown a little too much lightly cover it with a piece of foil.
