Pumpkin Spiced Coffee

Here in New Mexico we are lucky to say that we can find pinon coffee nearly everywhere. I love the flavor of the pinon in my morning cup of Joe. I have recently been experimenting with my usual cup of coffee which normally include a little low fat organic milk. I was inspired by a recent trip to our new neighborhood coffee shop on the way to school, I have been stopping there about once a week. My daughter love their pumpkin bread and blueberry scones. This past weekend while we were in the drive through lane I saw the picture of the pumpkin spice latte and thought I would give it a try, it was good, but way too sweet for this gal. I don't like sugar in my coffee and the pumpkin spice latte was loaded with sugar. I couldn't even drink the entire cup. So I started experimentally with my own low sugar Pumpkin Spiced Coffee. I think I have a winner here - pinon coffee, low fat milk, vanilla bean paste, a cinnamon stick, pumpkin pie spice, topped with real cream whipping cream and topped with pumpkin pie spice, cinnamon and nutmeg. This is my new favorite coffee drink and I think you will love it too. Don't worry if you don't have access to pinon coffee any strong brew will do. Let me know what you think. Ingredients
- 4 cups strong coffee
- 1/2 cup warm milk or half and half
- 1/2 teaspoon vanilla bean paste (or vanilla extract)
- 1 cinnamon stick
- dash or two of pumpkin pie spice
- dash or nutmeg
- dash of cinnamon
- Topping: real cream whipping cream and add another dash of pumpkin pie spice, cinnamon and nutmeg
Instructions
- For the Pumpkin Spiced Coffee start with 4 cups strong coffee add the warm milk, cinnamon stick, the vanilla bean paste, add the dash or two of pumpkin pie spice, and mix well. Finally top with whipping cream and add another dash of pumpkin pie spice, cinnamon and nutmeg
