Italian Omelette with Pesto

We love eating a great breakfast on the weekend at Casa Linda. I often go all out and make something really great for my family. This weekend I was inspired by this delicious omelette I had at a local restaurant called The Range Café. I recently shared an omelette there with a friend for breakfast. They made a three egg omelette and it was stuffed with all sort of delicious goodies. It was so delicious in fact that it inspired me to create my own version of this delicious Italian omelette (French spelling, not American since it was influenced by the French and Italian cuisine.) I would of never of thought to put pesto on top of my omelette – but not only did it make an old recipe for my normal everyday omelette come to life but it was extremely tasty. I used arugula in this recipe, but spinach or your favorite green would also go well, the arugula added a nice peppery flavor to the omelette and I used some fresh tomatoes from my garden. The fresh mozzarella cheese is what made this exceptional and best of all my children and husband loved it! Ingredients
- 2 eggs (beaten)
- ½ teaspoon Butter
- 2 small slice of mozzarella cheese
- 1 teaspoon prepared pesto
- 6 petite heirloom tomatoes
- Handful of arugula
Instructions
- Beat eggs until fully combined. Add butter to the sauté pan and then add the beaten eggs. Once the eggs have started to cook add the arugula, sliced tomatoes and mozzarella cheese. Cover with a lid until all the cheese is fully melted and the egg is no longer runny about 1 – 2 minutes. Gently fold over the omelette using a spatula. Garnish with the prepared pesto and serve.
Notes
- Garnish with fresh tomotoes or avocado
