Pumpkin Ginger Cake what a fun way to eat cake, out of a pie plate. I wanted something fun a different and thought it would be fun to try something new. I love it . . . it was fun to serve a cake in the shape of a slice of pie. It made for a lovely presentation. Of course the weather has been absolutely perfect here in New Mexico. All the flowers are in bloom and it makes my yard look so beautiful, what better way to enjoy my cup of pinon coffee this morning but with a nice slice of pumpkin ginger cake next to the pool. Absolute perfection . . . it is nice to appreciate the little things in life, as a busy Mom and business owner I am always rushing around. It felt so nice this Sunday to just sit and listen to the quiet sound of nature and enjoy a nice treat. The candied ginger really makes this recipe an outstanding one. I have never had anything quite like it . . . I hope you enjoy it too!

Ingredients
- 1 Ginger Bread Cake Mix
- ¾ cup water
- 1 cup canned pumpkin
- 1 teaspoon baking powder
- 3 eggs
- 1/3 cup vegetable oil
- 2 tablespoons crystalized ginger
- ½ teaspoon ground ginger
Garnish
- Cool Whip or Whipping Cream
- Cinnamon for sprinkling
- Mint leaves for garnish
Instructions
- Directions: In large mixing bowl add eggs and beat well on medium for about 30 seconds.
- Add package from cake box into mixing bowl, including baking powder, ground, ginger, crystalized ginger, pumpkin, oil, and water.
- Mix again for 2 minutes until all ingredients are fully blended.
- Pour into prepared cake pans or pie plates and bake in a 350 degree preheated oven for 28 – 30 minutes.
- Test cakes with tooth pick, poke in center if it comes out clean it is fully cooked.
- Allow to cool before plating.
- Garnish with whipping cream and cinnamon and a fresh mint leaf sprig.
Notes
- TIP: For a fun twist I baked the cake in pie plates. I thought it made for a lovely presentation! This recipe also works well for mini bundt cakes.
