Potato Salad with Chives

Warmer weather gets me excited for outdoor food like barbecue and wonderful side dishes like homemade potato salad. I don't know exactly how my mother did it but she made the best potato salad ever! I think it had something to do with allowing some of the potatoes to cook a tad bit longer so they would just melt into the dressing. In honor of my dear mother, I created this recipe. It is a little different than most and is a little spicy, I had something very similar at a resort I visited over spring break. This is my latest version of a very tasty homemade potato salad and a fantastic barbecue side dish. I hope that you like and I would love to hear from you. Ingredients
- 8 medium Yukon gold potatoes (about 2 1/2 pounds)
- 6 eggs
- 1/4 cup dill pickles, chopped
- 1/2 cup celery, finely chopped
- 1/4 cup sweet onion, chopped finely
- 1 cup mayonnaise
- 2 tablespoons prepared horseradish
- 2 tablespoons whole ground mustard
- 1 tablespoon Dijon mustard
- 1 teaspoon sea salt
- 1/2 teaspoon fresh ground pepper
- 1 tablespoon fresh cut chives
- Garnish fresh chive flowers
Instructions
- In a large pot boil whole potatoes until fork tender, about 20 - 30 minutes. In a separate pot boil eggs for 15 minutes then cool in a ice bath for 5 minutes, drain, crack an peel eggs.Chop into small pieces and set aside. Remove potatoes from heat once they are tender and cooked, drain potatoes and allow them to cool for about 5 - 10 minutes. Once they are cool, slice into bite size pieces about 3/4 of an inch in size. Place in a large mixing bowl with eggs, mayonnaise, pickles, celery, onion, mustard, horseradish, salt, pepper. Mix until well blended. Garnish with fresh chives and chive flowers.
Notes
- TIP: Potatoes vary in size, so if you need to add more mayonnaise please do. The chive flowers are edible and can add a beautiful garnish to your dish.
