Here is a great comfort soup you will love. I once went to Ireland and everyone there said I look like I was Irish. I think it was all my freckles. However, I do love potatoes (very Irish thing), mashed, baked, fried, and boiled in soup. This is a recipe that is easy and quick to make when you are wanting some real down home comfort food.
Potato & Corn Chowder
Directions: In a large pot fry bacon until crispy. Remove bacon and set aside. In the same pan add butter onion, celery and sauté until slightly tender. Add flour and let cook about 2 – 3 minutes; add chicken stock and potatoes. Bring to a boil, about 15 minutes until potatoes are fork tender. Add sweet corn and cook another 5 minutes. Add cream, and thyme. Season with salt and pepper. Garnish with chives, cheddar cheese and bacon. Serve immediately.
TIP: Smoked Applewood Extra Thick Bacon works great with this recipe.
