Pasta with Chicken and Petite Tomatoes
Let’s face it a working mother does what she has to do. Yes, even I use some prepared foods like pesto and frozen grilled chicken. Don’t get me wrong I love grilling my own chicken and making my pesto from scratch, but when I have been working all day and need to make a quick dish I will use some helpful ingredients to do so. Costco has some great frozen grilled chicken and I love their prepared pesto. I also keep minced garlic in the refrigerator. These ingredients come in handy for all sorts of recipes and quick dinner options.
Directions: In deep pot sauté olive oil and chopped onion for about 3 minutes then add the chopped garlic allow to cook about 2 more minutes on medium heat, then add one cup red wine (this will deglaze the pan and add depth of flavor) let most of the wine evaporate about 2 minutes, then add in petite diced tomatoes, the prepared pesto, and the frozen chicken grilled chicken. Season with salt, pepper and spices. Let simmer about 25 – 30 minutes. Meantime cook pasta according to package instructions – minus one minute for aldente. Serve pasta in large serving dish and cover with sauce and chicken. Add parmesan cheese and serve. Bon Appetit!
