Fall seems like the perfect time for oatmeal butterscotch cookies. This recipe is one of my favorites and especially this time of year. Oatmeal is so hearty and filling and the butterscotch cooking in the over makes my entire house smell define with cinnamon and vanilla. This is a easy recipe and it makes a lot of cookies. It is perfect for entertaining or if you need something to take to school, or a bake sale. This recipe yields about 48 medium sized cookies.
Oatmeal Butterscotch Cookies
Directions: Heat oven to 350°F. Spray cookie sheets with nonstick cooking spray. In large bowl, combine sugar, brown sugar, eggs and butter; beat until light and fluffy. Add vanilla and blend well. Add flour, baking soda, cinnamon and salt; mix well. Stir in oats and butterscotch chips and mix until all is blended. Drop dough by rounded teaspoonfuls 2 inches apart onto sprayed cookie sheets. Bake at 350°F for 8 to 10 minutes or until edges are light golden brown. Makes approximately 48 cookies.
