I love making soup for my family. And with a dusting of snow on the mountains today it just seemed like the perfect day for a great pot of soup. Soup is such a comfort food and with a nice side salad makes a healthy and delicious meal. I love that my son always asks for a second helping. It really makes me feel loved watching my children and husband enjoy my cooking. I am happy to share this recipe with you. This is really an easy recipe and so goooood . . . .
Minestrone Soup
Directions: In a deep soup pot add olive oil, onion, celery and garlic over medium heat. Sauté about 3 minutes being careful not let garlic brown just cook slightly. Add tomatoes, tomato sauce, herbs and water then bring to boil. Add in your mixed frozen vegetables, peas, and spinach. Allow to come to boil and add Worcestershire, noodles and beans. Season with salt and pepper. Cook approximately 30 minutes until noodles are tender. Stir often so noodles do not stick to bottom of pot.
Garnish with fresh parmesan cheese. Serve with hard crusty bread!
