Mixed Green with Black Bean Salsa

Try this healthy salad loaded with Black Bean Salsa! One of my own favorite. Keep it healthy and light or add my one of my cilantro lime vinaigrette, if you feel like you want more punch! The beans add fiber and will help keep you full throughout the day. The great thing about the salsa recipe is that you can add any type of chopped bell pepper, or chile peppers. If you like it spicy like me I add jalapeno peppers. You can be creative and change out the beans and substitute your favorite type of bean. When I don't have black beans on hand, I often use pinto beans. Change it up and have some fun - cooking is meant to be fun. I challenge you to be creative in the kitchen. Ingredients
- 6 ounced Mixed organic Greens
- Black Bean and Roasted Corn Salsa
- 1 cup sweet fire roasted corn
- 1 (12 ounce) can of black beans; rinsed and towel dried
- 2 – 3 fresh jalapeno peppers; seeded and diced finely
- 1 small red onion; chopped finely
- 1 red bell pepper; chopped finely
- 1 firm but ripe avocado; chopped into bit size pieces
- 1 lime; freshly squeezed
- ¼ teaspoon dried cilantro
- ¼ garlic powder
- 2 tablespoon balsamic vinegar
- 2 tablespoon olive oil
- Salt to taste
Instructions
- Layer mixed greens and top with black bean salsa. If you like you can add cilantro lime vinaigrette!
Notes
- TIP: Black bean salsa can be refrigerated for up to two days. Please add in the avocado as you need it to prevent it from turning black.
