
Corn tortilla layered with roast chicken, Mexican cheese, salsa and black bean and white corn tortilla. I purchase fresh made corn tortillas at a local Mexican grocery store. They make them fresh daily. Talk about amazing. They come in yellow corn or white corn. Today I decided to try the white corn tortillas for a change. They were still warm to the touch when I bought them.

- 1 1/2 cups Shredded Roasted Chicken, sliced
- 1 cup Black Bean & Roasted Corn Salsa (see previous post)
- 6 White corn tortillas
- 1 cup Mexican Cheese Blend
- 1 cup Salsa (fresh or homemade)
- Warm tortillas in oven or on a grill, layer chicken, sprinkle with cheese, add salsa and top with black bean salsa! It is that easy.
- Feeding an entire family? Try using a cookie sheet and layer tortillas, chicken and cheese and place under a broiler for a few minutes. I make about 8 at a time, this is quick and easy.
