- Mediterranean Spinach Salad with Greek Dressing
- 6 ounces baby spinach
- 1 cup chopped bell pepper, yellow
- 1 cup chopped English cucumber
- 1 cup shredded carrot
- 1 cup petite tomatoes, sliced in half
- 1/4 cup Kalamata olives, quartered
- 1/ 2 cup Feta cheese, crumbled
- 1/4 sun dried tomatoes
- 1/4 cup extra virgin olive oil
- 1/4 cup white balsamic vinegar (or red wine vinegar)
- 1 teaspoon dried oregano
- 1 teaspoon whole grain mustard (or Dijon mustard)
- 1/2 teaspoon sea salt
- 1/2 teaspoon lemon pepper
- 1/4 teaspoon garlic powder
- Fresh cracked pepper to taste
- In a large salad bowl layer spinach, bell pepper, cucumber, shredded carrot, tomatoes, Kalamata olives, crumbled Feta cheese, and sun dried tomatoes.
- In a small mixing bowl add olive oil, balsamic vinegar, oregano, mustard, sea salt, lemon pepper, garlic powder, and fresh cracked pepper.
- Mix until combined.
- Drizzle dressing over salad and toss.
- Serve immediately.

The times we are facing are strange and unfamiliar. If I didn’t address it – it would be wrong. Many of us are feeling anxious, depressed, and scared. These are difficult times we are experiencing. I have a few tips for you. (They have helped me so I thought I would share them.)
1. Meditate and Pray (it helps the anxiety)
2. Exercise an hour a day is perfect if time permits (promotes stress reduction and mental well-being)
3. Get some sunshine a minimum of 20 minutes each day
4. Take your vitamins (Daily Vitamins, plus Vitamin C, Zinc and L-Lysine is helps prevent getting most viruses
5. Stay home as much as possible
6. Practice social distancing
7. Remove your shoes after going out and leave them outside in the sun to help naturally disinfect them and use Lysol if you have it
8. Drink plenty of water to keep your immune system strong
9. Eat a balanced diet with lots of vegetables to keep you healthy and strong
10. Avoid too much sugar – it suppresses the immune system
11. Get at least eight hours of sleep
12. Wash your hands with soap regularly
13. Limit alcohol consumption
14. Get support from friends and family
15. Practice being Hopeful – use a gratitude journal to count your blessings
