Mediterranean Mixed Green Salad

Today is a beautiful day here in New Mexico. We have had the most interesting week of weather . . . freezing temperatures snow, rain, sleet, and now today it is going to be a high of 80 degrees F. That makes for a 50 degree variance in a few short days. I am not sure what to think . . . is it global warming making this weather absolutely crazy!?!? Your guess is as good as mine. I had to cover my garden so it wouldn't freeze a few nights ago. I think the basil may have suffered a slight freeze on some of the leaves and one tomato plant. I will know more in a day or two. But the rest of my garden looks great. I have planted tomatoes, kale, a variety of chile peppers, sweet peppers, and I have over 30 variety of herbs. It is a lot to keep up with, but I find it calming and peaceful at the end the day watering and working in my garden. I planted a lot of flowers by seed this year in order to save money. It can get expensive to fill pots around my house with annuals. I will post some pictures in a few days once they grow a little more. Now only if I have patience to watch the pots fill in . . . I want immediate gratification when it comes to my flower pots. Each year I add nasturtiums seeds to my large pots. By the end of summer they fill in beautifully. They do take some time to grow. I highly recommend adding them into large pots. The nasturtium flowers and leaves are edible and are great tossed into a summer salad. And speaking of salads this "Mediterranean Mixed Green Salad with a simple Lemon Herb Vinaigrette" is absolutely amazing. Mediterranean Mixed Green Salad
- 1 (6 ounce) bag of organic mixed greens
- 1 cup julienned carrots
- 1 scallion, sliced
- 1 cup crumbled feta cheese
- 1/2 cup sun-dried tomatoes
- 1 cup Kalamata olives, quartered
- 1 cup petite plum tomatoes, sliced
- 1 large firm avocado, sliced
- Lemon Herb Vinaigrette
- ¼ cup olive oil
- ¼ cup fresh squeezed lemon juice
- 1 teaspoon whole grain Dijon mustard
- ¼ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ½ teaspoon dried oregano
- ½ teaspoon salt
- Fresh ground pepper to taste
Dressing
- In small mixing bowl add all ingredients.
- Mix until all ingredients are blended.
- Salad assembly: layer mixed greens, carrots, scallion, feta cheese, sun-dried tomatoes, Kalamata olives, plum tomatoes and avocado.
- Drizzle salad with lemon herb vinaigrette.
- Toss and serve immediately!
