Mediterranean Hummus

I must admit I have bought store bought Hummus for years. Today I decided to make homemade hummus because my neighbor gave me grief for buying it. She said it is so easy and tastes so much better than the stuff from the grocery store. So I tried it, since I don’t stock tahini paste I substituted peanut butter and the votes are in from the family and the homemade stuff is way better. I will never buy store bought hummus again, well I might in a pinch. Wink, Wink.
Homemade hummus is much more flavorful with the fresh lemon juice, that is the key to this recipe the fresh squeezed lemon and the cumin add a depth of flavor. My only real tip is watch the garlic I only used a small clove and it was rather strong. I love garlic in anything so it was fine but if you have a hot date you might be a little careful and taste it as you go to make sure the garlic is not too strong. As I was saying the lemon really boosts the flavor of this dish and I love fresh lemon juice and if you like it too, feel free to add a little more if you like it too. You can’t go wrong with that!

Ingredients
- 1 cans drained garbanzo beans
- 2- 3 tablespoons fresh squeezed lemon juice
- 1 small garlic clove, grated
- ½ teaspoon cumin
- ½ teaspoon sea salt
- 1/4 cup olive oil
- 2 – 4 tablespoons water
- 1 tablespoon tahini paste or peanut butter
Instructions
- In food processor pulse garbanzo beans with lemon juice, grated garlic, tahini paste, cumin, sea salt and water. Begin to pulse until it is smooth then continue to pulse gradually pouring in the olive oil until the humus is creamy and smooth. For smoother hummus you can add a little more water. Serve with assorted vegetable or pita chips.
