Mediterranean Appetizer

I am always looking for quick and easy appetizer ideas. We had a few people over last weekend and I needed to throw something together quickly, I had made some home made hummus and was thinking about what I could serve with it to make it more interesting. ( Mediterranean Hummus - you can find recipe in a previous blog post.) On the way home from the office I stopped off a Trader Joe's to get some flowers. I picked up some of their mixed olives, a can of imported Greek Dolmas (stuffed grape leaves with rice), pita bread, mozzarella cheese, feta cheese and some fresh lemons. Talk about a delicious appetizer, and it was so easy and simple, it took all of 5 minutes to plate it up. I went well with a nice white sauvignon blanc wine I had on hand. Let me tell you everyone loved it. The dolmas are great alone, but I like squeezing a wedge of fresh lemon over them. Anyway it was the perfect appetizer with out a whole lot of effort. I hightly recommend it for your next dinner party.

Ingredients
- 8 ounces Mozzarella Cheese, drained
- 8 ounce Feta Cheese
- 10 ounce can Dolmas, drained
- 4 whole wheat pita, heated and sliced into small wedges (6-8 per pita)
- 1 lemon sliced
- 1 cup hummus (see previous blog post for recipe)
- 8 ounces mixed olives, drained
Instructions
- Drain and towel dry the Mozzarella cheese and Greek olives. Drain the Dolmas, garnish with fresh lemon. Heat Pita over open flame on low heat for about 5 seconds on each side, slice, plate all ingredients on serving dish, place hummus in the center and place everything around it. Enjoy!
Notes
- You can always buy prepared hummus, if you want to make it even easier!
