
Salad are always a favorite meal at Casa Linda (a nick name for my house here in New Mexico.) My family loves eating salad. We sometimes eat salad as a meal. This layered chef’s salad would be perfect for a light dinner option. It is loaded with ham, cheese and a large variety of veggies. I would also suggest adding boiled eggs for for more protein, that is if you like eggs. I was fresh out eggs so I skipped eggs on this salad. I also added some blue cheese crumbles to the top. If you are not a huge fan you could skip the blue cheese. This beautiful layered salad would also make a great salad for a brunch. Since we are not entertaining much lately due to COVID, I made this salad for a light dinner for four people. I had some leftover and ate it the next day for lunch. YUM!
Layered Chef’s Salad

- 4 cups Romaine lettuce, chopped
- 1 cup shredded cheddar cheese
- 1.5 cups chopped ham
- 1 cup frozen sweet peas, thawed
- 1 cup sliced cucumber
- 1 cup chopped red cabbage
- 1 cup chopped cauliflower
- 1 cup petite tomatoes, sliced in half
- 1/4 cup Blue cheese crumbles
- In a large glass bowl or trifle dish layer the salad.
- Start with the lettuce, saving some to add on the top.
- Then add cheese, ham, peas, cucumber, cabbage, cauliflower, tomatoes, more lettuce and finally the blue cheese crumbles.
- Serve with your favorite dressing. (I served it with blue cheese dressing but a vinaigrette would also be great for this salad.)
- This salad could be made ahead of time. Please wrap carefully with cling wrap to prevent wilting. Refrigerate up to six hour before serving.

Beautiful food always makes it taste better in my opinion. There is some truth in that. When it looks beautiful it somehow makes the brain think it tastes better. Plus the fact that all the ingredients were super fresh and cut just before serving it. If you like the glass trifle dish they can be found at most Walmart, Target, and on Amazon. I use my trifle dish for desserts and salads. It really does make a beautiful presentation.

I don’t know about you, but I am so looking forward to spring. Covid and winter are two things I am not crazy about.
