Kale Salad with Candied Pecan

Yes another kale salad, I am wanting to keep you on the healthy track this New Year! Kale is so good for you. Did you know it is one of the highest sources of vegetable proteins? It also helps boost your immune system. During these cold winter months that is what we all need. Kale is a super food and loaded with iron which helps to keep your hair, skin, nails and bones healthy. This leafy green is packed with vitamins and minerals. Kale can be a little tough if the leaves are over grown if this is the case it partners well with lemon and olive oil. The lemon helps tenderize the leaves.
Unlike most lettuce this hardy green doesn’t get soggy. If you are entertaining and need a salad that will hold up for hours – this should be your salad of choice. You can even make it a day ahead of time. The Lemon Herb Vinaigrette is the perfect pairing with this salad and the candied pecans are a sweet bite and nice crunch.

Ingredients
- Kale Salad with Candied Pecans
- 1 (6 ounce) bag of organic chopped kale
- 1 cup julienned carrots
- 1 cup purple cabbage, chopped
- 1/2 cup dried cranberries
- 1 cup cauliflower florets
- 1 cup pre-packaged candied pecans (Trader Joes)
- ¼ medium red onion; sliced
- Lemon Vinaigrette
- ¼ cup olive oil
- ¼ cup fresh squeezed lemon juice
- 2 tablespoons apple cider vinegar
- 1 teaspoon whole grain Dijon mustard
- 1/2 teaspoon Italian Seasoning
- ¼ teaspoon garlic powder
- ½ teaspoon Salt
- Fresh ground pepper to taste
Instructions
- Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are well blended. You can also use a blender if you prefer.
- Salad assembly: layer kale, red onion, cauliflower, purple cabbage, julienned carrots and candied pecans. Drizzle with dressing, toss well and serve immediately!
Notes
- TIP: Both the salad and dressing can be made up to 24 hours ahead of time. Reserve the dressing in an air tight container and cover salad with plastic wrap. Make sure it is air tight! Air is what causes lettuce and vegetables to wilt.
