Chipotle Sloppy Joes

Let’s face it most men cannot live without their meat. That is a true statement, at least at my house. I think it would be easy for me to be a vegetarian but my husband is from Kansas City and those boys from Kansas City are meat eaters. I have cut down on the amount of meat we eat but every now and then I get a request for a sloppy Joe. Funny request don’t you agree? Sloppy Joes are not one of my personal favorite but my kids and husband love them. To make this dish more exciting I added in some chipotle chilies with the adobe sauce and it really made this dish stand out. Just like any spicy peppers you have to be careful they always vary in heat so if you don’t like a lot of spice try one or two peppers with some sauce and add from there. Ingredients
- 1 pound ground beef (93% lean /3% fat – leaner equals healthy)
- 4 chipotle peppers with juice; chopped finely
- 1 small sweet onion; diced
- 1 (12 ounce) can sloppy Joe sauce
- Salt to taste
- ½ teaspoon garlic powder
- 4 Pepper Jack cheese slices
- 4 hamburger buns
- 1 teaspoon butter
Instructions
- Mince chipotle peppers until very fine and set aside. In medium frying pan add ground beef, onion and season with salt and garlic powder. Brown beef for about 8 – 10 minutes or until it is fully cooked. Mix in the chipotle chilies with sauce and allow to heat through. Remove pan from heat. Butter buns and grill until slightly toasted, plate buns and layer meat with sauce and add pepper jack cheese. Place under 500 degree broiler for about 1 -2 minutes until cheese is fully melted, add second half of bun and serve.
