Kale Salad & Lemon Herb Vinaigrette

Kale is so good for you. Did you know it is one of the highest sources of vegetable proteins? It also helps boost your immune system. It is a super food and loaded with iron which helps to keep your hair, skin, nails and bones healthy. This leafy green is packed with vitamins and minerals. I use it often in my salads. Kale can be tough if the leaves are over grown if this is the case it partners well with lemon and olive oil. The lemon helps tenderize the leaves.
Unlike most lettuce this hardy green does not get soggy. If you are entertaining and need a salad that will hold up for hours – this should be your salad of choice. Ingredients
- 1 (6 ounce) bag of organic chopped kale
- 1 cup julienned carrots
- 1 cup purple cabbage shredded
- 1 cup cauliflower florets
- ¼ sweet onion, chopped
- 1 cup thinly sliced Brussels sprouts
- 1 roasted red pepper, chopped
- 4 radishes; sliced thinly
- 4 ounces feta cheese; broken into small chunks
- Lemon Herb Vinaigrette
- ¼ cup olive oil
- ¼ cup fresh squeezed lemon juice
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon herbs de province
- ¼ teaspoon garlic powder
- 1 teaspoon sea salt
- Fresh ground pepper to taste
Instructions
- Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are well blended.
- Salad assembly: layer kale, sweet onion, carrots, cauliflower, purple cabbage, roasted red bell pepper, radishes, and feta cheese. Drizzle with dressing, toss well and serve immediately!
Notes
- Salad can be made up to one day ahead of time. Reserve the dressing in an air tight container and cover salad with plastic wrap. Make sure it is air tight! Air is what causes salads and vegetables to wilt.
