Kale & Mushroom Frittata

Frittata is a based on and Italian dish reach translates to “egg-cake”. It is basically a crust free quiche. The dish can have a variety of vegetables, meats, cheeses and often pasta. Frittatas are a great way to use leftover vegetables and are a simple healthy option for breakfast or lunch. The great thing about frittatas is that you can be creative and add a variety of your favorite vegetables, meats and cheeses to this Italian dish . I make frittatas often because they are easy and quick. As a working Mother that is always important to me. For this frittata I used some left over kale, mushrooms and onion and added some chopped ham and sharp cheddar cheese. This was probably the best frittata I have ever made, no joke! It was so good in fact – that I simple had to share it with you! In a blink of an eye the entire frittata way gone. I only had a small bite! That is always are sure sign at Casa Linda (my house) that it was a winner! I hope it inspires you to create some of your own delicious frittatas.

Ingredients
- Kale & Mushroom Frittata
- 6 eggs (beaten)
- ½ cup Chopped ham
- 1 cup chopped Kale
- ¼ Onion chopped
- 3 medium Mushrooms
- 1cup sharp cheddar cheese
- Pinch or two of Chile flakes
- Salt and Pepper to taste
Instructions
- In small sauté pan sauté ham, kale, onions and mushrooms until tender, season with salt and pepper and red chile flakes. Add mixed eggs and cook for about 1 -2 minutes until you see the edges are cooking. Add the cheese over the mixture and transfer into a 400 degree oven and finish cooking for 8 - 10 minutes until the top of the frittata is lightly golden brown. Gently loosen frittata edges with a spatula from the pan and place frittata onto a serving plate. Allow the frittata to set for a minute or two before cutting. Serve immediately.
