
Start out the new year with eating a salad a day. I do this every New Year – it helps get me in the right mind set. You can’t go wrong with this amazing salad loaded with lots of vegetables and topped with this amazing Chipotle Vinaigrette.


- 6 ounces mixed greens
- 1 cup petite heirloom tomatoes
- 1 cup broccoli florets
- 1 cup snap peas, sliced
- 1/2 cup cucumber sliced
- 1/2 cup julienned carrots
- 1/4 cup Feta crumble cheese
- Spicy Chipotle Vinaigrette
- 1/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1-2 tablespoons chipotle sauce
- 1/2 teaspoon sea salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- Spicy Chipotle Vinaigrette: In a small mixing bowl add olive oil, vinegar, chipotle sauce, salt, garlic powder and ground cumin. Mix until blended.
- Salad: In a large salad bowl layer greens, tomatoes, broccoli florets, snap peas, cucumber slices, julienned carrots and Feta cheese. Drizzle with chipotle vinaigrette, toss and serve.

This salad would be great for lunch or dinner. The amazing vinaigrette is a sure winner.
