Hearty Kale Salad with Lemon Herb Vinaigrette Well it seems that this happens every holiday season, I just get tired of all the sweets and rich food. Right about now I start wanting to eat more salad and soup. I am sure I am not alone on this one, because my kids are asking for more fresh fruit too. I started juicing and making smoothies a few years back during the winter months to boost our immune systems. The kids would bring home a terrible cold virus or flu bug every winter and with my busy schedule, I just don’t have time to get sick. So eating the right foods is so important. Now, I am proud to say, my kids love to make smoothies. Kale is a great for many things, including smoothies or juice. Or if you love salads, like I do, you will enjoy this recipe. I love eating kale and I especially like it in salads, for me the key ingredient in a kale salad is fresh squeezed lemon juice. The lemon works so well with this hearty green and it helps add fresh wonderful flavor but it also tenderizes the kale leaf, making it easier to digest.

Ingredients
- Healthy Kale Salad with Lemon Herb Vinaigrette
- 1 (6 ounce) bag of organic chopped kale
- 1 cup julienned carrots
- 1 red bell pepper chopped
- 4 ounces feta cheese; broken into small chunks
- ½ cup chopped pistachio nuts
- 1 cup chopped celery
- 1 cup thinly sliced cucumber
- Lemon Herb Vinaigrette
- ¼ cup olive oil
- ¼ cup fresh squeezed lemon juice (about 1 medium lemon)
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon herbs de province
- ¼ teaspoon garlic powder
- 1 teaspoon sea salt
- Fresh ground pepper to taste
- Dressing: In small mixing bowl add all ingredients and mix well until all ingredients are well blended.
- Salad assembly: layer kale, carrots, celery, red bell pepper, sliced cucumber and feta cheese. Drizzle with dressing, toss well, top with feta and chopped pistachio nuts and serve immediately!
