
My latest creation is so amazing – you must try this Green Chile and Mushroom Alfredo Pasta Casserole. It is so simple to prepare and is perfect for a weeknight dinner option. Also, check out my photos from my recent road trip to Colorado. See below.

- 1 (16 ounce) Cellentani Pasta
- 2 jars (15 ounce) Mushroom Alfredo Sauce or Regular Alfredo Sauce
- 2 cans (4 ounce) Hatch diced Green Chile
- 1 cup Parmesan cheese
- 2 pinches nutmeg (or fresh ground nutmeg is very good!)
- 1/2 teaspoon garlic powder
- 1 cup Panko bread crumbs
- Cook pasta according to directions.
- In a large mixing bowl add cooked pasta, Alfredo sauce, diced green chile, Parmesan cheese, nutmeg and garlic powder.
- Mix gently until blended.
- Pour into large casserole dish.
- Sprinkle with Panko bread crumbs.
- Bake in preheated 375 degree over for 20 - 25 minutes or until bread crumbs are light golden brown.
- Serve immediately.
- I like my green chile spicy - so I used hot Hatch Green Chile - but you can substitute medium or mild chiles.

While in Boulder my good friends Cynthia and Chris took us to visit the Boulder Farmer’s Market. The market was fantastic! The amount of fresh produce was unbelievable. I had the best morning taste-testing things like infused honey, salsas, hot sauce and fresh picked produce. If ever in Boulder this is a MUST. The Farmer’s Market is open Saturday mornings and is located in the heart of downtown Boulder. Make sure to eat breakfast while you are there – it was well worth the wait!

A long time friend and college classmate – Patti and Cecelia overlooking the Arkansas River. I LOVE Colorado! If taking a road trip this one I would recommend. First stop was in Denver for a few nights then we drove about an hour north to Boulder stayed there a few nights and then to Salida for three nights. The drive back was amazing as we drove along the Arkansas River and through the Sangre de Cristo mountain range south to Howard, WestCliffe, Walsenburg and then finally to Trinidad to Interstate-25 and back to Albuquerque. It was a full day of driving but very scenic. You see lots of ranches and plenty of wildlife including deer, eagles, big horn sheep and much more.

Boulder Farmers Market located in Downtown Boulder, Colorado

We only spent a few nights in Boulder, next time we will stay longer. The shopping is amazing in that mountain town. My daughter is a huge fan of Brandy Melville and since we couldn’t find one in Denver we drove to the one located in Boulder. School shopping is always so much fun! Shown here more fresh cut flowers. The variety of flowers was breathtaking.

Check out the size of the amazing heirloom tomatoes. I wish I could of bought more to bring home. I had the car smelling of cantaloupe and that was bad enough. My kids gave me grief the entire trip home.

Fresh Crepes made to order. The market had an assortment of food vendors. I had the breakfast crepe with hollandaise sauce and Katherine had the Chocolate Raspberry and both were DELISH! Nicholas tried a Chorizo Breakfast burrito from another vendor which was equally tasty! Our friends had breakfast paella – see below.

My friend Chris and Cynthia had the breakfast paella with an egg on top! Fresh made paella at the Downtown Farmers Market in Boulder, Colorado. This paella pan was nearly three feet across. WOW!
