Everyday Cornbread Stuffing

Stuffing does not have to be a holiday thing, my husband Ted inspires me to make it every so often. Inspires is the key word here, he brings home the ingredients and says, do you think "we" can make pork chops and corn bread stuff with purple braised cabbage. He saw a picture in a magazine and got the idea. He knows I love pork chops and braised cabbage. "We" is his way of asking if "I" will make it, after twenty five years I still fall for it and nicely agree. Where does the time go, really I can't believe we have been together nearly twenty-five years. The things you do for love.

Ingredients
- 4 cups corn bread stuffing mix
- 1 pound cooked sage sausage
- 1 1/2 cups chicken broth
- 1 granny smith apple, chopped
- 1 cup chopped celery
- 1 small onion chopped
- 1/2 teaspoon black pepper
- 1 mashed garlic clove
- 4 tablespoons butter
Instructions
- Add two tablespoons of butter to a large skillet. Over medium high heat cook apple, onion, celery, garlic, sausage. Cook until sausage is fully cooked about 12 minutes. Season with pepper. Transfer to a 9 x 12 baking dish. Mix stuffing and sausage mixture, then add chicken broth and add remaining butter. Bake for 20 - 25 minutes or until it lightly browns. Serve immediately.
