Extra Thick Grilled Pork Chops

Extra Thick Grilled Pork Chops with cornbread stuffing and braised cabbage. What a great comfort meal. I don't eat this way everyday because if I did - oh boy, I would be in BIG trouble. The key to great grilled pork chops is the marinade and not over cooking them. Most people over cook the meat and that really dries it out. Pork is similar to chicken when grilling and can easily be over cooked. With a thick cut of pork you want to cook it about 10 minutes on each side and always allow it to rest, for about 5 to 10 minutes before cutting into it, otherwise your will release all the natural juices of the meat. A great marinade also helps. These were perfectly grilled thanks to the hubby. Nice job Ted. I hope you enjoy this recipe. Happy Holidays.
