Braised Purple Cabbage
1 small head of cabbage, shredded
1 medium onion chopped
1 teaspoon sea salt
Fresh ground pepper to taste
2 tablespoon extra-virgin olive oil
2 tablespoon butter
In a large non-stick skillet add olive oil, butter, onion and cabbage. Cook over medium high heat mix every 3 minutes, making sure to allow cabbage and onion to lightly brown and caramelize. This will add the depth of flavor you are looking for. Add salt and pepper to taste. Serve immediately.
One thing I am beginning to realize is that I am a purest, when it comes to making certain recipes. This recipe for braised purple cabbage is perfection. When braising vegetables you really don’t have to add much because the braising itself really intensifies the flavors. Braising is similar to grilling, the grill gives the food extra flavor, well braising does the same thing. It basically caramelizes the food giving it intense flavor. Braised cabbage is one of my favorite vegetables. I wanted to try using purple cabbage for the holidays to add some color. Although once fully cooked the deep vibrant purple disappears. It is still lovely and tastes amazing. Talk about a healthy side dish. This is it. Braised cabbage can go with any meat but I think it is exceptional with pork.
