Easy Arrabiatta Pancetta Penne Pasta

When it's hot out I have a hard time cooking "HOT" food in the kitchen! I like simple easy meals that don't take a ton of time. This is one of those ridiculously easy meals, I fondly refer to them as cheater meals, because I use a few prepared items to make it easy and quick, but still keep it delicious!
You gotta love short cuts in the kitchen especially when the food tastes like it took hours to prepare. I served it with Kalamata Garlic Toast and some delicious red wine. I love hearing from you - it really makes my day. Follow me on Facebook and Pinterest.

Ingredients
- 1 pound Imported Italian Penne Pasta
- 1 cup chopped Italian pancetta
- 1 Jar Spaghetti Sauce (Use your favorite, I used Trader Joe's Arrabiatta Sauce)
- 2 tablespoon Extra Virgin Olive Oil
- 1 12 ounce can diced tomatoes
- 1/4 chopped onion
- 2 cloves garlic
- 1/2 cup sliced kalamata olives
- 1/2 cup Parmesan cheese
- 1 teaspoon Italian Seasoning
- 2 tablespoon fresh basil or prepared pesto if you have it, if not substitute 1/2 teaspoon dried basil
Instructions
- In a saute pan, add olive oil, pancetta, onion and garlic. Saute for 2 -3 minutes, watching carefully not to burn the garlic, add the diced tomatoes, kalamata olives Arrabiatta sauce, and herbs. Simmer for 20 minutes while you cook the pasta. Cook pasta according to package directions. Drain and serve with spaghetti sauce. Garnish with Parmesan Cheese and enjoy!
Notes
- Garnish with Parmesan Cheese and serve with a nice crusty loaf of bread!
