Delectable Italian Pasta with Oyster Mushrooms

Let it be known I am a pasta lover through and through. I am very particular about my pasta, I certainly don't like it overcooked. My husband Ted came home with this beautiful hand rolled pasta from Cost Plus, it was in the shape of a leaf, sorry I didn't manage to get a picture of it before I cooked it. It was imported from Italy and it was only $4.99 for a pound. It was fabulous and what was even better were the fresh oyster mushrooms from the growers market, my friend Lucia grows these amazing mushrooms. You can find them at the downtown growers market on Saturday mornings. They are out of this world, well the remaining ingredients may of helped a little. Wink, wink. Ingredients
- 1 cup Petite Frozen Peas
- 3 tablespoons Butter
- 3 tablespoon Extra Virgin Olive Oil
- 2 cloves minced garlic (about 1 tablespoon)
- 1 bunch Oyster Mushrooms (approximately 2 cups)
- 1/4 cup grated Parmesan Cheese
- 1/4 Dry White Wine
- 1 Tablespoon Fresh chopped Parsley
- 1 Tablespoon Fresh chopped Basil
- 1 pound Imported Italian Pasta
Instructions
- In a large saute pan, add butter and olive oil mushrooms and garlic. Saute until mushrooms are tender about 5 minutes, then add wine and herbs. Cook until the wine has evaporated about 2 - 3 minutes. Add peas, cooked pasta and parmesan cheese. Gently fold pasta into mushroom sauce until all the ingredients are coated with the mushroom sauce. Serve immediately.
Notes
- TIP: Use a high quality imported pasta noodle. It really does make a huge difference in the taste and texture!
