Heirloom Tomato Salad & Homemade Vinaigrette

I came home from vacation to find a huge inventory of fresh ripe tomatoes in my garden. I was pleasantly surprised, to see an broad assorment of heirloom tomatoes, Roma tomatoes, cherry tomatoes and mini plum tomatoes. I also had a large supply of San Marzano tomatoes, these are the Italian tomatoes that are $4 a can, so I was super excited about that. I immediately made a huge pot of spaghetti sauce and divided it up into three containers, I froze it to save for a convenient week night dinner option. It comes in handy when I need something quick and easy. I simply add some Italian sausage or meatballs, and boil the pasta, it makes for a delicious dinner for the family.
As far as my garden is concerned, this is the first year I have had a great year of growing tomatoes in my garden. I attribute it to the extra rainfall and the cooler temperatures. I didn't do anything different than I have done in previous years.
I mentioned earlier, I am just back from my vacation in California. I just love my yearly trip to the beach, it inspires me to stay healthy, getting in a swimsuit daily, will do that to you. So needless to say, I am ready to get back on track with eating healthy. The older I get the more I realize the importance of eating plenty of vegetables and lean protiens. I try to teach my children the importance of eating the right types of foods and I think I am doing a good job, especially when they tell me what I should and shouldn't be eating. Don't you love it when they give it right back to you, seriously it makes my heart feel happy! After looking at the beach photos, I definately need to lose some weight, there is no doubt about it. So I am back to eating a salad a day. I made this wonderful salad with the beautiful heirloom tomatoes and made a nice light vinaigrette, it was perfect for lunch. For those of you wanting more protien, I recommend a nice grilled chicken breast or some albacore tuna. It would go well with this salad. As always I love hearing from you. Ingredients
- 2 cups sliced small heirloom tomatoes (I used a variety)
- 2 cups sliced cucumber (peeled if not using an English or Persian cucumber)
- 4 cups chopped romaine lettuce
- 1 tablespoon chopped red onion; sliced
- 1 teaspoon fresh dill; chopped finely
- Homemade Vinaigrette
- 1/4 cup Olive Oil
- 1/4 cup white wine vinegar (Trader Joe's)
- ½ teaspoon dried Italian Seasoning
- ½ tablespoon whole grain Dijon mustard (Imported from France preferably, Trader Joe's)
- ½ teaspoon sea salt
- fresh ground pepper to taste
Instructions
- Homemade Vinaigrette: In small mixing bowl add all ingredients and mix well until all ingredients are well blended. You can also use a blender.
- Salad assembly: layer tomatoes, sliced cucumber and red onion, drizzle dressing over entire salad, add fresh dill, toss and serve immediately!
Notes
- You can store any left over salad dressing. It last for up to one week stored in the refrigerator.
