Curried Chicken Salad

I love pre-roasted chicken, I especially like that I can use it to make so many different types of tasty dishes for my family and that it helps to save time and effort. Creating new and fun dishes is something I thrive on and I am happy to share my inspiration with you in hopes that you can use these recipes to share with those you love. This recipe was recently featured on Bakerette.com. Thanks Jen for helping me to spread my creative recipes with others. Here is my recipe for Curried Chicken Salad. With the days getting longer and hotter I find that I am eating more salads, fresh fruits and vegetables. I also find that I am going for long walks and riding my bike much more than usual, I wish this was the case all year. There is something about summer that inspires me to stay healthy, I just love this time of year and wish it would stay this way year round. Living here in New Mexico that is just not possible, we experience all four seasons. And really if the truth be known, I like spring and fall too. As I get older, I find that I am less fond of winter. But seriously, summer does inspire to stay healthy and eat healthy. I try to eat a salad a day during the summer months when vegetable and fruits are at the best, inspired by some beautiful red grapes I purchased at the market today, I created this delightful Curried Chicken Salad. It is loaded with red grapes and has a nice twist with some mild curry powder. It is nice and light and perfect for a hot summer day. I hope you enjoy it! Please follow me on Pinterest and Instagram!

Ingredients
- 4 cups chopped chicken (roasted chicken)
- 1 cup chopped celery, extra fine
- 1/4 cup chopped onion
- 1 cup red grapes, cut in half
- 1 heaping teaspoon of mild curry powder
- 1 teaspoon of stone ground mustard
- 1 cup mayonnaise
- ½ teaspoon Sea Salt
Instructions
- Remove skin from chicken, gently remove meat from the chicken personal I prefer to use the breasts and thighs and chop chicken meat into bite size pieces. Add chicken to a mixing bowl and add chopped celery, onion, mayonnaise, stone ground mustard, curry powder, salt and grapes. Mix until well blended. Serve over iceberg lettuce or your favorite greens!
