Crumble Peach Pie

As I set here this morning drinking my coffee, I really get the feeling that fall is in the air, I am thinking of all the reasons I love fall. Not only does the weather cool down but the food and produce is in abundance this time of year. The moon will be full tonight. I can't wait. I woke up at 5:00 a.m. as usually and I could see the bright glow of the moon coming in from the stained glass window. I felt thankful to see it in its full glory. It was so big and beautiful. I get up early for two reasons to work and do my social media posts and for peace of mind. The entire house is still sleeping. I make my morning pinon coffee and enjoy the stillness of my home. When life is so busy, sometimes you need that quiet meditative moment before the hustle of the day begins. My dog Buster likes to sleep in, so it is rare if he wants to go outside that early. For me that little bit of solitude makes all the difference for me to start out my day in peace. And speaking of fall my great friend and client Loretta gave me some of these amazing peaches from her tree. They were perfectly ripe. So I made this amazing Crumble Peach Pie. Loretta, I haven't forgotten you. I will bring a pie by soon. Life has been so busy with finishing the final edits and proof for the new cookbook. It will be here the first of November. Ingredients
- 2 prepared pie shells
- 3 pounds peaches
- 1 teaspoon grated orange zest
- 3 tablespoons freshly squeezed orange juice
- 1/2 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
Crumble topping
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar, lightly packed
- 1/2 teaspoon salt
- 1 cup old-fashioned quick cook oatmeal
- (1 stick) unsalted butter, melted for 45 seconds on high in microwave
- Garnish with a big scoop of vanilla bean ice cream
Instructions
- Directions: Preheat the oven to 350 degrees F. bake shells for 10 minutes. Then cool. Slice and peel peaches, removing the seeds. Cut into medium slices. Put the peaches in a large mixing bowl and add the orange zest, juice, sugar, flour, and cinnamon. Toss well and then pour into pie plates. Divide equally between the two pans.
- For the topping: combine flour, sugars, salt, oatmeal, and butter a large mixing bowl. Mix until the mixture is well blended. Sprinkle over the peach mixture, covering the fruit completely. Place pies onto cookie sheet pan and bake for 50-55 minutes or until the top is brown and the fruit is bubbly. Serve warm with vanilla ice cream.
