Croissant Breakfast Sandwich

Today I was working on my cookbook most of the day, checking email and stepped outside to water my garden for a little break from the computer screen. I was thinking about how much I have accomplished over that last two or three years. I was in awe of myself. I am not saying this to boost, but thinking about all the things women do four our families and the sacrifices we make, often putting on own dreams on hold to raise kids, and nurture our families. I decided that I should take extra good care of myself this weekend. And in honor of all Mom's out there this is for you. This is a great Mother’s day breakfast idea, especially if served to Mom in bed. It is an easy breakfast sandwich that any Mom would love to be served on Mother's day. Soft and flakey warm croissant with Canadian bacon, sharp cheddar cheese, an egg and garnished with a nice fat slice of heirloom tomato. Serve it with a cup of coffee and some fresh squeezed juice and Mom will feel like a queen, especially if you serve it to her in bed. Treat Mom extra special, because she deserves it. Ingredients
- 4 butter croissants
- 4 slices canadian bacon
- 4 slices of sharp cheedar cheese
- 4 slices of heirloom tomato
Instructions
- Slice croissant in half and toast croissant lightly. Mean time warm canadian bacon in saute pan, about 1 minute on each side over medium heat, remove and use the same pan for steaming the eggs. Spray pan with non-stick canola oil, crack four eggs individually cover pan with lid, cook about 2 -3 minutes or until the egg turns white, add a minute of two if you don't like a runny yoke. Remove and layer croissant with bacon, cheese, egg and tomato.
Notes
- Tip: The cheese will melt from the heat of the egg. Serve with fresh squeezed orange juice and a fresh cup of coffee and you are good to go. MOM will be so happy!
