Crispy Oven Baked Potatoes

I once traveled to Ireland and the thing I loved about my travels there was not just the wonderful people of Ireland but the many ways they cooked potatoes and vegetables. This dish was inspired by some great thin baked potatoes I had when I was there.
I love potatoes cooked in every way including fried, mashed, boiled, and baked extra crispy. I added my New Mexico spice blend to give the potatoes and extra kick, ha, ha, I sound like Emeril! The red chile powder really is the secret to this tasty dish. I served them with some grilled steak and it was the perfect pairing. If you love potatoes you will really love this recipe.

Ingredients
- 4 medium russet potatoes scrubbed and sliced
- 1/2 teaspoon red chile powder
- 1/2 teaspoon garlic powder
- 1 teaspoon canola oil
- 1/2 teaspoon dried cilantro
- Salt & Pepper to taste
Instructions
- Directions: slice potatoes into thin slices and place onto a greased cookie sheet. Season with chile powder, garlic powder, dried cilantro, salt and pepper on both sides. Place in 450 degree F. oven for approximately 20 minutes flipping potatoes after 10 minutes allowing both side to crisp. Serve immediately.
