Chopped Kale Salad

Yummy salads are my thing. I love all food but I especially like creating healthy salads. As I celebrated my 50th Birthday last month it really struck me that I need to take better care of myself. Cooking lots of food makes it hard for a girl to stay trim at Casa Linda. So I try to eat a salad a day. It is a great way to show my children the importance of eating great and healthy food. This is my latest creation – chopped kale salad loaded with lots of great things like kidney beans, roasted red peppers, kalamata and green olives, pepperoncini peppers, salami, and mozzarella cheese. The vinaigrette is the perfect combination for this tasty goodness.

Chopped Kale Salad Ingredients
- 2 cups chopped kale (remove stems)
- 1/4 cup roasted red bell peppers; sliced
- 1/4 cup sliced pepperoncini peppers
- 1/4 cup dark red kidney beans; rinsed and towel dried
- 6 kalamata olives, drained and sliced
- 6 green olives, drained and sliced
- 10 slices of Salami; sliced thinly lengthwise
- 6 slices of mozzarella cheese, chopped
- 2 Tablespoons red onion, sliced
- 2 Tablespoons grated parmesan cheese
Vinaigrette Ingredients
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- ½ teaspoon dried Italian seasoning
- 1 tablespoon Worcestershire sauce
- 1 tablespoon whole grain Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon garlic powder
- Fresh ground pepper to taste
Instructions
- Directions for vinaigrette : In small mixing bowl add all ingredients and mix well until all ingredients are well blended.
- Salad: layer kale, red onion, red bell peppers, kidney beans, kalamata olives, green olives, salami, mozzarella cheese, peperoncini peppers and parmesan cheese. Drizzle with dressing and serve immediately!
