Cast Iron Broccoli & Cheddar Frittata

This “Broccoli and Cheddar Frittata” makes for a great healthy breakfast or the perfect dish for a small brunch. Frittatas are terrific because they are loaded with fresh vegetables and plenty of protein from the eggs. They are low in carbs and are gluten free. Frittatas are great because you can add nearly any type of vegetable to them. Over the years I have created dozens of frittatas for my family. The kids love them. They make great leftovers, and heat nicely in the microwave. Frittatas make a nice light dinner option served with a side salad. They are also great for brunch. You can easily double the recipe to feed a larger group. I never get tired of this recipe. I switch out the vegetables and herbs making it new tasty every single time. Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 cups broccoli florets, chopped
- 1/2 yellow bell pepper, chopped
- 1/2 orange bell pepper, chopped
- 2 scallions, chopped
- Salt to taste
- Pinch of cayenne pepper
- Pinch of red pepper flakes
- 1 1/2 cups medium cheddar cheese, shredded
- 8 Eggs, well beaten
Instructions
- Warm iron sauté pan over medium heat. Add olive oil, broccoli, yellow and orange peppers and scallions. Cook until tender about 3-5 minutes. Season with salt, cayenne pepper, and red pepper flakes. Add cheddar cheese and egg mixture. Transfer pan into preheated 375° F. oven. Bake until lightly golden brown, approximately 15-20 minutes or until center is cooked. Allow to set and cool for about 10 minutes. Gently loosen frittata edges with a spatula. Then slice into wedge like slices like a pie and serve.
