
Simple and Easy Recipe for Cast Iron Broccoli and Cheddar Frittata. The perfect brunch recipe or great light dinner option served with a nice side salad.


- 2 tablespoons extra-virgin olive oil
- 2 cups broccoli florets, chopped
- 1/2 yellow bell pepper, chopped
- 1/2 orange bell pepper, chopped
- 2 scallions, chopped
- Salt to taste
- Pinch of cayenne pepper
- Pinch of red pepper flakes
- 1 1/2 cups medium cheddar cheese, shredded
- 8 Eggs, well beaten
- Warm iron sauté pan over medium heat. Add olive oil, broccoli, yellow and orange peppers and scallions. Cook until tender about 3-5 minutes. Season with salt, cayenne pepper, and red pepper flakes. Add cheddar cheese and egg mixture. Transfer pan into preheated 375° F. oven. Bake until lightly golden brown, approximately 15-20 minutes or until center is cooked. Allow to set and cool for about 10 minutes. Gently loosen frittata edges with a spatula. Then slice into wedge like slices like a pie and serve.

Healthy vegetables like broccoli, yellow and orange bell peppers, and fresh scallions make this a hearty frittata.
