Best Ever Swedish Meatballs

I have to admit this is my first attempt at Swedish Meatballs, I looked up numerous recipes and made up mine own mixing and picking ingredients which I liked and most importantly had in stock. I didn’t feel like running to the grocery store. Long day at the office, if you know what I mean. My daughter Katherine signed me up to make them for her social studies class, her report was on Sweden, thus Swedish Meatballs. Have you ever been to Ikea? They serve great Swedish Meatballs, with mashed potatoes and steamed veggies, with lots of gravy and a side of Lingonberry jam. It is a perfect meal after shopping for hours on end. I have only been twice, but can’t wait to go again. I enjoy shopping at Ikea, and have found some awesome things in there store. Wish we had one here in New Mexico,I am just saying! Well inspired by those Swedish Meatballs, I wanted to make my meatballs petite, similar to what I ate in the Ikea cafeteria. I love egg noodles, so I served them over garlic buttered egg noodles instead of mashed potatoes. Any way they turned out great, actually better than great, FANTASTIC is more like it. I like my food a little more on the savory side, so I added more spices. I think they were perfect and so did her class. They ate them all and only sent back a few egg noodles. Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 1 pound ground beef
- 1 pound ground pork
- 1/2 cup Panko bread crumbs
- 2 large eggs, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground allspice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Salt and freshly ground black pepper, to taste
Gravy
- 1/4 cup butter
- 1/3 cup flour
- 4 cups beef broth
- 3/4 cup heavy cream
- Salt and freshly ground black pepper, to taste
- 2 tablespoons fresh parsley leaves, chopped
Instructions
- Directions: Heat olive oil in a large skillet over medium heat, add chopped onion, and cook, stirring frequently, until onions have become translucent, about 2-3 minutes. In a large bowl, combine ground beef, ground pork, Panko bread crumbs, beaten egg, garlic powder, allspice, nutmeg and cooked onion; season with salt and pepper, to taste. Mix well until all ingredients are well combined. Roll the mixture into 1 - 1 1/4 inch meatballs, forming about 36 meatballs. Place meatballs onto parchment lined cookie sheet, bake at 425 degrees for 12-15 minutes.
- Gravy: To make the gravy, melt butter in the skillet. Whisk in flour until lightly browned, about 1-2 minutes. Slowly whisk in beef broth and cook over medium high heat, continue whisking constantly, until slightly thickened, about 4-5 minutes. Stir in heavy cream; season with salt and pepper, to taste. Stir in meatballs and cook until heated through, about 3-5 minutes. Serve immediately over butter egg noodles, garnished with parsley.
